Ingredients You Will Need

For the Potato Coating

  • 3 large potatoes cut into thick sticks
  • 3 tablespoons cornflour
  • 2 tablespoons all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Water as needed
  • Oil for frying

For the Honey Chilli Sauce

  • 1 tablespoon oil
  • 1 tablespoon chopped garlic
  • 1 teaspoon grated ginger
  • 1 small onion sliced
  • 1 small capsicum sliced
  • 1 teaspoon red chilli flakes
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon tomato ketchup
  • 1 tablespoon honey
  • 1 teaspoon red chilli sauce or more for extra spice
  • 1 teaspoon salt or as needed
  • 1 teaspoon sugar optional
  • 1 teaspoon cornflour mixed in 2 tablespoons water

For Garnish

  • Spring onions
  • Sesame seeds
  • A little extra honey if you like a shiny finish

Step by Step Process to Make Perfect Honey Chilli Potatoes

Step 1

Prepare the Potatoes

  1. Wash and peel the potatoes. Cut them into medium sized thick sticks so they cook evenly.
  2. Soak the potatoes in cold water for at least 10 minutes. This removes extra starch and helps them stay crisp after frying.
  3. Boil water in a pot and add the potato sticks. Cook for 3 to 4 minutes only. They should not become soft. They must remain firm.
  4. Drain the potatoes and let them cool completely. Spread them on a plate so they do not stick together.

Step 2

Make the Coating

  1. In a bowl, mix cornflour, all purpose flour, salt, and black pepper.
  2. Add very little water to create a thick batter.
  3. Add the cooled potato sticks and coat them evenly. Every piece should be covered properly for maximum crispiness.

Step 3

Fry the Potatoes Until Crisp

  1. Heat oil in a deep pan.
  2. Fry the coated potatoes on medium flame until they turn light golden.

  4. Add red chilli flakes, soy sauce, vinegar, tomato ketchup, and red chilli sauce. Mix well.
  5. Add salt carefully because sauces already contain salt.
  6. Add a little sugar if you want a slight balance of taste.
  7. Pour the cornflour slurry and stir gently. This will make the sauce slightly thick and glossy.
  8. Add honey at the end and mix again. The sauce should now be shiny and coat the spoon lightly.

Step 5

Combine Fried Potatoes With Sauce

  1. Add the double fried crispy potato sticks to the sauce.
  2. Toss gently until every piece is fully coated with the glossy honey chilli mixture.
  3. Cook on high flame for one minute so the sauce holds onto the potatoes tightly.
  4. Turn off the heat.

Step 6

Garnish and Serve

Sprinkle sesame seeds and chopped spring onions on top.
You can also drizzle a thin line of honey for an extra sparkle and taste.

Serve immediately while the potatoes are still hot and crispy.
