- Half cup urad dal

- 1 onion sliced
- 1 green chilli
- Half teaspoon mustard seeds
- Half teaspoon cumin
- 1 tablespoon oil
- A few curry leaves
- Half teaspoon turmeric
- Half teaspoon salt
- A little coriander
For Serving
- Coconut chutney
- Sambar
Step by Step Method to Make Masala Dosa
Step 1
Soak and Grind the Batter
- Soak rice and urad dal for four to five hours.
- Add poha if using.
- Grind the mixture with water until smooth.
- Add salt and let it ferment for eight hours or overnight.
Step 2
Make the Potato Masala
- Heat oil in a pan.
- Add mustard seeds and cumin.
- Add curry leaves.
- Add sliced onion and green chilli.
- Cook for two minutes.
- Add boiled potatoes and turmeric.
- Add salt and mix well.
- Add coriander and switch off the heat.
Step 3
Cook the Dosa
- Heat a tawa or flat pan.
- Pour a ladle of batter in the center.
- Spread it thin in a circular motion.
- Add a little oil on the edges.
- Cook until golden and crispy.
Step 4
Add the Masala Filling
- Place a spoon of potato masala in the center.
- Fold the dosa gently.
- Serve hot.
