Vietnamese Spring Rolls are light fresh and very healthy rolls made with rice paper vegetables herbs and sometimes shrimp or chicken. These rolls are not fried. They are served cold with a simple dipping sauce. The taste is clean soft and full of natural flavor. People in Vietnam enjoy them as snacks appetizers or light meals.

What Are Vietnamese Spring Rolls

Vietnamese spring rolls are made with

  • rice paper sheets
  • fresh vegetables
  • herbs
  • noodles
  • shrimp or chicken optional

The rolls are soft fresh and very colorful.


Ingredients You Will Need

For the Rolls

  • 6 to 8 rice paper sheets
  • 1 cup cooked rice noodles
  • 1 carrot thinly sliced
  • 1 cucumber thinly sliced
  • Lettuce leaves
  • A few mint leaves
  • A few basil leaves
  • 6 cooked shrimp optional
  • Salt pinch

For the Dipping Sauce

  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • Half teaspoon sugar
  • Half teaspoon chilli flakes

Step by Step Method to Make Vietnamese Spring Rolls

Step 1

Prepare the Vegetables

  1. Slice carrot and cucumber thinly.
  2. Wash lettuce leaves.
  3. Keep herbs ready.

Everything should be fresh and crisp.


Step 2

Prepare the Sauce

  1. Mix soy sauce lemon juice sugar and chilli flakes.
  2. Stir well.
  3. Keep aside.

Step 3

Soften the Rice Paper

  1. Dip one rice paper sheet in warm water for a few seconds.
  2. Take it out and place it on a clean plate.
  3. The sheet becomes soft quickly.

Step 4

Fill the Roll

  1. Place lettuce noodles carrot cucumber herbs and shrimp on the soft rice paper.
  2. Add a little salt.
  3. Fold the sides and roll gently.

The roll should look neat and tight but not too tight.


Step 5

Repeat

  1. Make all rolls the same way.
  2. Keep them covered with a cloth so they do not dry.

Serve and Enjoy

Serve the spring rolls cold with dipping sauce.

They taste fresh soft and very light.
