Soft Indian Masala Dosa With Crispy Outside And Warm Spiced Potato Filling

Masala Dosa is a famous South Indian dish made with a thin crispy rice and dal batter filled with a warm spiced potato masala. It tastes crispy on the outside and soft inside with rich flavors from curry leaves mustard seeds and turmeric. What Is Masala Dosa

Masala dosa is made with

  • rice and dal batter
  • crispy dosa base
  • spiced potato filling
  • chutney and sambar for serving

The dosa becomes thin golden and crunchy when cooked correctly.


Ingredients You Will Need

For the Dosa Batter

  • 2 cups rice
  • Half cup urad dal
  • 1 tablespoon poha optional
  • Water as needed
  • Salt as needed

For the Potato Masala

  • 3 boiled potatoes
  • 1 onion sliced
  • 1 green chilli
  • Half teaspoon mustard seeds
  • Half teaspoon cumin
  • 1 tablespoon oil
  • A few curry leaves
  • Half teaspoon turmeric
  • Half teaspoon salt
  • A little coriander

For Serving

  • Coconut chutney
  • Sambar

Step by Step Method to Make Masala Dosa

Step 1

Soak and Grind the Batter

  1. Soak rice and urad dal for four to five hours.
  2. Add poha if using.
  3. Grind the mixture with water until smooth.
  4. Add salt and let it ferment for eight hours or overnight.

Step 2

Make the Potato Masala

  1. Heat oil in a pan.
  2. Add mustard seeds and cumin.
  3. Add curry leaves.
  4. Add sliced onion and green chilli.
  5. Cook for two minutes.
  6. Add boiled potatoes and turmeric.
  7. Add salt and mix well.
  8. Add coriander and switch off the heat.

Step 3

Cook the Dosa

  1. Heat a tawa or flat pan.
  2. Pour a ladle of batter in the center.
  3. Spread it thin in a circular motion.
  4. Add a little oil on the edges.
  5. Cook until golden and crispy.

Step 4

Add the Masala Filling

  1. Place a spoon of potato masala in the center.
  2. Fold the dosa gently.
  3. Serve hot.

Serve and Enjoy

Serve masala dosa hot with

  • coconut chutney
  • sambar
  • tomato chutney

The dosa is crisp warm and very satisfying.


Tips for Perfect Masala Dosa

  • Ferment batter well
  • Spread batter thin
  • Do not use too much oil
  • Cook on medium high heat
  • Make fresh chutney for best taste
