  • tortillas
  • cheese
  • filling like chicken or vegetables

It is folded and cooked until the cheese melts and the tortilla becomes crisp.


Ingredients You Will Need

For the Filling

  • 1 cup cooked shredded chicken
  • 1 small onion chopped
  • Half cup capsicum chopped
  • 1 teaspoon oil
  • Half teaspoon salt
  • Half teaspoon pepper
  • Half teaspoon chilli powder
  • Half teaspoon cumin

For the Quesadilla

  • 4 tortillas
  • 1 cup grated cheese mozzarella or cheddar
  • A little butter or oil

For Serving

  • Salsa
  • Sour cream
  • Fresh coriander

Step by Step Method to Make Chicken Quesadilla

Step 1

Cook the Filling

  1. Heat oil in a pan.
  2. Add onion and capsicum.
  3. Cook for two minutes.
  4. Add shredded chicken.
  5. Add salt pepper chilli powder and cumin.
  6. Mix well and cook for two more minutes.

The filling should taste warm and lightly spicy.


Step 2

Prepare the Quesadilla

  1. Heat a pan on low to medium heat.
  2. Place one tortilla on the pan.
  3. Add cheese on one half of the tortilla.
  4. Add some chicken filling.
  5. Add more cheese on top.
  6. Fold the tortilla in half.

Step 3

Cook the Quesadilla

  1. Cook the folded tortilla on one side until golden.
  2. Flip gently and cook the other side.
  3. The cheese should melt and the outside should be lightly crisp.

Step 4

Cut and Serve

  1. Remove the quesadilla from the pan.
  2. Cut into triangles.
  3. Serve warm with salsa sour cream or coriander.

Tips for Perfect Quesadilla

  • Use plenty of cheese for soft melty texture
  • Cook on medium heat only
  • Do not overfill the tortilla
  • Flip gently to avoid breaking
  • Add more seasoning if needed
