Ingredients You Will Need

For the Couscous

  • 1 cup couscous
  • 1 cup hot water or vegetable broth
  • 1 tablespoon olive oil
  • Salt to taste

For the Vegetable Stew

  • 2 tablespoons olive oil
  • 1 onion chopped
  • 3 garlic cloves chopped
  • 2 carrots sliced
  • 1 zucchini sliced
  • 1 cup pumpkin cubes optional
  • 1 cup chickpeas cooked
  • 1 tomato chopped
  • Half teaspoon cumin
  • Half teaspoon paprika
  • Half teaspoon turmeric
  • A pinch of cinnamon
  • Salt to taste
  • Black pepper to taste
  • 2 cups water or broth

For Garnish

  • Fresh coriander chopped
  • Raisins optional for light sweetness
  • Lemon wedges

Step by Step Method to Make Moroccan Couscous

Step 1

Prepare the Couscous

  1. Take couscous in a bowl.
  2. Add hot water or vegetable broth.
  3. Add olive oil and salt.
  4. Cover the bowl and let it rest for ten minutes.
  5. After resting fluff the grains gently with a fork.

The grains should separate easily and feel light.


Step 2

Prepare the Vegetable Stew

  1. Heat olive oil in a pot.
  2. Add chopped onions and sauté until soft.
  3. Add garlic and cook until fragrant.
  4. Add carrots zucchini pumpkin and chickpeas.
  5. Add chopped tomato and mix well.
  6. Add cumin paprika turmeric cinnamon salt and pepper.
  7. Pour two cups of water or broth.
  8. Cover and cook for fifteen to twenty minutes until vegetables become tender.

Step 3

Adjust the Stew

  1. Check seasoning and add more salt or spices if needed.
  2. The stew should be slightly thick with soft vegetables.
  3. If it becomes too thick add a little more water.

  1. Place a generous portion of couscous in a wide bowl.
  2. Pour the vegetable stew over the top.
